Navodila za pripravo:
V velikem loncu zavrite vodo, jo rahlo solite in dodajte testenine. Kuhajte jih po navodilih na embalaži, običajno 8-10 minut, dokler niso al dente. Ko so kuhane, jih odcedite, vendar prihranite malo vode od kuhanja, ki jo boste kasneje dodali omaki.
Medtem ko se testenine kuhajo, narežite jajčevec na tanke rezine. Rezine rahlo posolite in pustite stati 10 minut, da izločijo odvečno vodo. Nato jih popivnajte s papirnatimi brisačkami. Na ponvi segrejte žlico oljčnega olja in popecite rezine jajčevca, dokler niso zlato rjave in mehke. Popecite jih v obeh straneh in nato odstranite iz ponve ter postavite na stran.
V isti ponvi dodajte še eno žlico oljčnega olja in na srednji temperaturi popražite drobno nasekljano čebulo in česen. Ko čebula postekleni, dodajte mleto govedino. Meso med praženjem razdrobite z vilico, dokler se ne zapeče in lepo porjavi. Nato prilijte paradižnikovo omako in dodajte origano, baziliko, sol in poper. Zmanjšajte ogenj in pustite omako, da rahlo vre 10 minut, da se okusi povežejo. Če je omaka pregosta, lahko dodate nekaj vode, ki ste jo prihranili od testenin.
Ko je mesna omaka pripravljena, testenine zmešajte z omako. Premešajte, da se okusi dobro prepojijo. Nato na vrh dodajte popečene rezine jajčevca. Postrezite takoj in po želji posujte s sveže naribanim parmezanom.
